An Open Letter on Additive-Free Rum

Why It Matters
We believe now is the time for rum. It’s one of the world’s great spirits, but much of what’s out there hides the plant’s true flavor behind heavy processing and additives. We believe plants and natural processes make the best flavors, and our job is to deliver those flavors with as little interference as possible.
That’s why we start with fresh juice from kō—heirloom Hawaiian sugarcane. The flavor is in the juice. We work hard to preserve those flavors at juicing and then develop them during fermentation and distillation. For example, we distill at a much lower proof—around 70% alcohol by volume (ABV)—to keep as much of those beautiful floral and fruit notes as possible, allowing roughly five to six times more flavor to come through compared with rum distilled to 94%. Because we begin with exceptional cane juice and distill gently to preserve its essence, we don’t need or want to add anything afterward.
Most rum, by contrast, is distilled to strip out flavors—close to 94% ABV—which is the legal limit for rum before it must be classified as vodka or neutral spirit. Producers can then add up to 2.5% by volume of syrups, colorings, or flavorings to define their style. We chose a different path.
How We Verify It
There isn’t a single global standard for “additive-free” yet, so we’re doing the work ourselves. Specifically, every rum we distill and every rum we blend is reviewed through a combination of independent lab analysis and supplier documentation.
Our rums are tested by White Labs Analytical Lab, which reports total sugar levels below 0.5 g/L—the natural range for spirits without added sugar. This isn’t a government certification; it’s our own commitment to verify what we make.
For the rums we source, we work only with producers who share our values. They confirm through process audits and laboratory testing that their rums contain no added color, flavoring, or sweeteners. We also require each supplier to confirm that every batch arrives with a Product Specification Sheet verifying the absence of additives.
Our goal isn’t to prove perfection; it’s to make our process visible. Every step—from growing kō to distilling and blending—is designed to preserve the integrity of what the cane gives us. We share our methods and our reasoning because trust isn’t earned by saying we’re transparent—it’s earned by showing the work.
What Additive-Free Means to Us
It’s simple: we don’t put anything in our rum after it comes out of the still. If it’s clear, it’s unaged. If it’s brown, that color comes from time in used bourbon and cognac barrels—nothing else. Most “gold” and “dark” rums rely on coloring to get their hue.
We make sure every vendor who supplies rum for our blends follows the same rule: absolutely no additives of any kind.

Additive-free isn’t a claim of purity; it’s a reflection of how we work. We grow kō—heirloom Hawaiian sugarcane—on our farm in Kohala and distill its fresh juice into rum without adding anything. We source and blend with partners who share that same respect for honesty and craft.
Our purpose is to transform rum into the best spirit in the world by relying on plants and natural processes—fresh juice, regenerative farming, heirloom kō, and no additives—to create rum of the highest quality and show exactly how it was made.
